What will I study? This is a day release, advanced practical training course for people who are working in a professional kitchen environment. You will develop comprehensive skills and knowledge to a high level suitable for this environment. The course is made up of a series of practical and theory based units, which include the following depending on which department you work in: - Health & safety including food safety and safe environment - Food preparation & cookery - Preparing & cooking dishes in meat, fish, pasta and vegetables - Contributing to the work of a team - Hospitality legislation - Rotas - Food costing & control - Kitchen administration
