This course is a lead-in to advanced patisserie and is aimed at learners with a general understanding of pastry and kitchen skills. It is suitable for people who wish to gain an understanding into the production of hot, cold and frozen desserts, fermented goods, biscuits, cakes and sponges and pastry based produce. You will require some equipment and uniform and there is an element of home study and portfolio work.
