INTRODUCTION TO PROFESSIONAL COOKERY

This course is designed to give you a broad range of cookery skills and will form an introduction into the hospitality industry. The practical classes will include food preparation and food service. The theory lessons will cover the essential knowledge and will complement the required assignment work. The course is suitable for school leavers and adults who would like a career in the Catering and Hospitality sector. You will study the following Health and Safety Food Hygiene Healthy Eating Kitchen Equipment Practical tests will be based around different aspects of cooking and assessed by an external examiner as well as a local high profile chef. The food and drink assignments are based around Legal Aspects Menus Dealing with Payments and Bookings Food and Beverage Service Skills Bar Skills Hot Beverage Skills All LMC students will receive tutorial support and take a programme of Functional Skills including English, maths and ICT.
