This is a one year, full time course. This course is for those who would like to further develop their catering skills, learning to create more complex dishes and increase their knowledge of advance cookery concepts that will help them gain employment in catering. The course is designed for those who wish to improve their skills to the level of a sous chef of patisserie. During the course you will learn about more specialist ingredients and methods including pastry-based dishes. You will prepare food that is served to the public at our AA College rosette training restaurant 'Graduates' during lunch and evening service. Students are also expected to obtain part time employment to practice their new skills. Maths and English will be at the core of your study programme.
