During the course you will study the following mandatory units: ; Introduction to the catering and hospitality industry ; Food safety in catering ; Introduction to personal workplace skills ; Prepare and cook food by stewing and braising ; Prepare and cook food by baking, roasting and grilling ; Prepare and cook food by deep and shallow frying ; Cold food pre-prepared food You will also complete a certificate in Food Handling. Alongside your main programme of study you will also study either GCSE or Functional Skills in English and Maths if you have not achieved a GCSE grade C or above. If you have achieved a grade C or above in GCSE English and Maths, you will engage in extending these skills through a Directed Study Programme.
