This programme is designed for School leavers or mature students who are aiming for a Career in Hospitality and Catering. The course focuses on developing your practical skills in a kitchen and restaurant environment. The course will involve some evening work at the colleges specialty signature nights. You will learn all the skills necessary to prepare and cook and finish a wide range of food dishes. Gaining experience in boiling, poaching and steaming, preparing to cook and finish foods by stewing and braising, roasting and grilling, deep and shallow frying and regeneration of prepared food and cold foods preparation and finish. As well as developing your skill in our practical cookery classes you will gain valuable skills to help you in the hospitality and catering industry including food safety: health and safety awareness for the hospitality industry,: introduction to kitchen equipment and introduction to personal workspace skills. The programme includes food service, starting work in hospitality and customer care.
