Professional Cookery NVQ Level 2 Diploma

This practical, portfolio-based qualification builds on the work completed at Level 1. It offers an alternative progression route for those keen to gain additional catering and food service skills in preparation for further study or embarking on a career in the industry. This course delivers the practical skills and knowledge you will need to work successfully across all areas of the food service industry. To achieve the full qualification you must complete 3 mandatory units and 11 optional, examples of which are effective teamwork, food safety, health and safety preparation and cooking of meat, poultry, fish, vegetables, hot sauces, stock and soups. In addition you will gain an additional Level 2 Diploma in Hospitality, thus gaining experience of all aspects of the hospitality and catering industry at level 2. You will gain valuable hands on experience working in our professional kitchens, preparing and serving meals in our Bistro and Restaurant, both of which are open to the public. Our well attended themed evenings provide an excellent opportunity to help develop confidence and experience. Throughout the year you will have the opportunity to participate in competition work.
