Patisserie Entry Level

Students will firstly learn the importance of workplace skills and professionalism needed to make a positive impression in the hospitality industry and working within a team. Students will produce dishes using varied doughs, pastry, sponges, biscuits, hot and cold desserts, sauces, fillings and accompaniments, chocolate decorations and seasonal specialities throughout the year. Students will experience first-hand the day to day preparation, production, finishing and presentation of a wide range of pastry, dough and patisserie products, all completed for the busy training restaurant to a high specification. Students will be constantly designing and creating new dishes for the The Glass House Restaurant.
