This course ideally follows on from the soft cheese course but could be taken as a stand-alone course. Previous cheese-making knowledge is helpful but not essential. The course will guide you through the production processes associated with cheddar and crumbly cheese types; you will learn the techniques and skills to produce a hard cheese with a range of practical and theoretical sessions. The course topics include: - Milk selection - Maturation - Dairy chemistry and microbiology - Importance of ingredients - Pressing of cheese - Methods of dressing
