What will I do on this study programme? This study programme is made up of 16 core units comprising of five theory and 11 practical elements. This study programme enhances those skills learnt at Level 1 and introduces further technical skills as you continue your journey towards this exciting industry. At this level you will have the opportunity to join our Chefs Academy. The topics you will study include Developing skills for employment, Food safety in catering, Health and safety in the catering industry, Healthier foods and special diets, Catering operations costs and menu planning, Prepare and cook stocks soups and sauces, Prepare and cook fruit and vegetables, Prepare and cook meat and offal, Prepare and cook poultry, Prepare and cook fish, Prepare and cook rice, Pasta and grains, Produce hot and cold desserts and puddings, Produce paste products, Produce biscuits and sponge products, Produce fermented dough products. How will I be assessed? Theoretical units will be assessed through a combination of short answer, multiple choice assessments and assignments. We'll assess craft units with a series of practical timed assessments. What options do I have after successfully completing? Progress to Professional Cookery, VRQ Diploma, Level 3 Event Management or Hotel Management, BTEC Extended Diploma. Job/career opportunities Work as a chef in the hospitality and catering industry A wide range of other careers in this sector, including food and beverage and event operations and hotel trainee management.
