The NVQ Level 3 Professional Cookery course offers you a natural progression route from the current Level 2 programme. You will develop existing culinary skills to a higher level and be introduced to new and more advanced food preparation and cooking techniques. The course will run over one day and one evening producing food for the public in our Jubilee Restaurant, where you will, on occasions, act as head chef or sous chef, supervising the production of your own menu. You will study both the theory and the practical elements of professional cookery and will assessed through observation of you working in the practical environment, in written or computer based tests. The current working days are Wednesday daytime and Thursday evening.
