Does the challenge of cooking the finest food in the fast-paced, kitchen environment of a top restaurant appeal to you? The work of a chef is varied and you could find yourself doing anything and everything from preparing fish as a starter to preparing whole venison from the larder section or tempering chocolate for desserts. There are so many options available but in a few years you could be managing that prestigious kitchen. So, if you like meeting new people, helping them out, working in a team, and seeing a satisfied customer eat your food, then this is the career for you. Modules cover investigating the hospitality and catering industries, food safety in catering, healthier foods, and special diets. You'll also be taught how to prepare and cook stocks, soups, and sauces, fruit and vegetables, meat, poultry, and fish, grains and pasta, breads, and desserts. Theoretical aspects will be assessed primarily through assignments and short-answer questions. Seven practical tests will take place throughout the programme, with the two main practical tests happening towards the end of the course. This programme aims to build on your existing competencies and develop a greater level of practical skills. Special feaures include: opportunities for work placements in local and national hotels opportunities to enter local, national, and international competitions the chance to take part in a three-week, European placement (subject to funding) At the 2006 and 2008 Welsh International Culinary Championships, Loughborough College was voted 'Best College in Show'.
