This advanced course includes: - The use and application of more 'technical' and 'commercial' ingredients will be demonstrated. - A choice of recipes and fillings which will allow them to continue to develop their own style of chocolates. - Filling truffle shells and pre-made cases/novelty shapes - An introduction to more commercial methods allowing students to mass produce chocolates, though still on an artisan scale. - Making: Easter Eggs - Advanced moulding, marbling 2 chocolates setting decorations into the shell; 'aero' style chocolate - aerated whipped chocolate and 'crunchie' style chocolate - honeycombs.The course will be taught with a mix of teacher led demonstrations, theory and hands on practice.This course is ideal for anyone interested and looking to increase their repertoire and skills. Students will learn the necessary skills to make and mould high chocolate confections, which would be suitable for a small artisan business working from home.
