You will study practical units twice a week at our commercially run Jubilee restaurant covering the following areas: - Reduction sauces - Terrines - Advanced butchery techniques - Fine desserts You will also study theory based units in the classroom and can expect to cover the following areas related to the industry: - Food Safety - Kitchen Management If you have not yet achieved a grade C (or above) in GCSE English and maths, you will be required to attend GCSE resit sessions (if you achieved grade D) or functional skills sessions (if you achieved grade E or below).
