This course will enhance career opportunities for professional chefs by developing and building on NVQ 2 skills to a more complex level also focusing upon patissiere units. You will build a portfolio of evidence to prove your competence in each unit.Candidates will undertake the following units of study: -Menu planning and recipe compilation -Health, Safety and Security -Develop positive working relationships -Food Safety -Prepare and cook complex fish dishes -Prepare and cook complex meat and poultry dishes -Prepare and cook complex sauces and cold dressings -Prepare and cook complex vegetable dishes -Prepare and cook hot desserts -Prepare and cook cold desserts -Prepare and cook complex fermented dough products -Prepare and cook complex soups Assessment will be continuous in practicals and class-based underpinning knowledge sessions.
