This course is for chefs working in this field who wish to develop and expand their skills and knowledge to an advanced Level. You will study the Level 3 qualification in the first term followed by the College Culinary Award over the rest of the course. You will expand your culinary creativity and resource management strategies to meet the needs of all sectors of the industry. Study specialist units including preparation and cooking of complex fish and shellfish dishes, meat, poultry and game dishes, soups, hot sauces and pasta dishes, vegetable dishes and classical garnishes.
