This is a very practical course for those who are looking to improve and advance their skills in the kitchen, restaurant and bar, as well as those looking for a professional career in the Catering and Hospitality industry. Contents include: Food preparation and cookery The preparation, cookery skills and techniques for meat, fish, poultry, fresh pasta, rice, sauces soups and stocks. As well as developing a sound knowledge of food safety, Health and Safety for this exciting fast moving industry. Food and drinks service The preparation and service skills for food and beverages (including coffee, tea, wines, beers spirits and cocktails) as well as developing excellent customer service skills. You will also be given the opportunity to become head chef/waiter and run your own themed event designed and planned by you with the support of our knowledgeable industry experienced staff. Nationally recognised Functional Skills qualifications.
