This course gives an understanding of the basic principles of food safety including the safe handling of food and the prevention of food poisoning. Units studied throughout the course will include legislation food safety hazards temperature control refrigeration chilling and cold holding cooking hot holding and reheating food handling principles of safe food storage cleaning food premises and equipment.
