This advanced programme of work is specifically designed for those people who have achieved a Level 2 in Professional Cookery or have attained an equivalent qualification and wish to continue their development of the knowledge and skills. Candidates must complete 16 Units to achieve a full certificate units covered will include: establish and develop positive working relationships in hospitality maintain the health safety and security of the working environment maintain food safety when storing preparing and cooking food prepare cook and finish a range of complex dishes using fish meat poultry and vegetables prepare cook and finish complex dressings and hot and cold sauces.
