This qualification covers all the patisserie and confectionery skills and knowledge to show you've got what it takes for a successful career as a pastry chef, or to improve your culinary ability. This course develops your practical skills in both patisserie and confectionary and food and beverage service through training in the college's purpose-built kitchens and restaurants, giving you greater confidence for working in the industry. There are practical elements, including units such as producing hot and cold desserts and puddings, producing biscuit, cake and sponge products and producing fermented dough products. You will learn to cook in a professional environment supported by a team of experienced tutors. You will be trained to give a high standard of service in the training restaurants, which ensures you are equipped to enter employment in either food production or food and beverage service.
