Candidates will be required to complete 3 mandatory units; -Maintaining food safety when storing ,preparing and cooking food -Working effectively as part of a hospitality team -Maintain a safe, hygienic and secure working environment They will then need to complete further units from Food Service and Beverage Service options, in order to gain enough credits to successfully complete the qualification. Units include, but are not limited to: -Produce meat dishes -Cook-Chill food -Produce basic hot sauces -Produce basic hot and cold desserts -Produce flour, dough and tray baked products -Produce healthier dishes -Maintain an efficient use of resources on the kitchen -Modify the content of dishes -Prepare and cook meals to meet the requirements of allergy sufferers -Provide a counter/takeaway service An assessor will also visit the work place, to carry out observations, professional discussions, and to set assignments. It is anticipated that the course will take one year to complete.Once you have enrolled onto the programme you will be assigned an assessor that will visit you in the workplace regularly. They will complete assessment plans and reviews with you to keep you on target. They will support you in the collection of the required evidence needed for your qualification through different assessment methods such as; professional discussion, observations, written questions, verbal questions, witness statements and any assignments.Candidates can progress to a Level 3 Diploma in Food Production and Cooking; it may also be useful to complete the CIEH Food Hygiene qualification.
