PROFESSIONAL COOKERY - LEVEL 3

This is an NVQ Level 3 course that runs for 34 weeks. This course is primarily for practising chefs who are currently employed possibly within a supervisory role in the hospitality industry, or progressing from a level 2 course with part time employment within the industry. The course is very practical and programmed throughout the year in modules. Each week covers both practical and theoretical work. The units studied include: * Complex hot and cold desserts * Bread and dough products * Complex meat and poultry dishes * Complex hot and cold sauces * Complex soups * Complex fish dishes * Complex vegetable dishes * Practical training in HACCP The dishes are both classic and contemporary ranging from: * Pressed terrine of ham hock and mustard potatoes * Grilled fillet of monkfish with saute new potatoes, castle of green beans and a tarragon aioli. The course may also include visits to: * Trade Shows (Manchester) * Restaurants * Fish markets * Butchery classes All students aged 16-19 are required to study Functional English and Maths qualifications or GCSE mathematics and English if not already awarded a grade A*-C in these subjects. If you have a grade D at GCSE you will study maths and/or English GCSE. Students with a grade lower than D will work towards GCSE through the study of Maths and English Functional Skills. Students aged 19+ are strongly encouraged to take relevant maths and English qualifications to support progression into further or higher education, training or employment.
