This is a 12 month practical training course for people who are working in the hospitality sector in a combined role of front and back of house e.g. dealing with customers, handling money and carrying out basic preparation and cooking activities. For example, Catering Assistant, Porter, Room Attendant, Room Service, Reception etc. The training programme also develops the associated knowledge and understanding needed to carry out these practical skills in a restaurant and kitchen environment. It is a combination of on-the-job assessment with off-the-job support, teaching and learning. The course is made up of a series of practical and theory based units, which may include the following depending on which department you work in: - Dealing with customers - Cash handling - Teamwork - Health and Safety - Food hygiene - Communication and use of number in the workplace - Basic food preparation and cookery e.g. sandwiches, salads, vegetables - Service styles - Setting up for service on a counter
