The course is run over 3 weeks for 2 days a week with an exam 4 weeks later. The course provides food industry professionals with a good working knowledge of food industry procedures, legislation and bacteriology, enabling them to manage food safety in their workplace. You will be studying bacteriology, food-borne illnesses, physical contamination of food, food storage, temperature control and preservation, design and construction of food premises and equipment, cleaning and disinfection, pest control, personal hygiene, training strategies, legislation and management control techniques (HACCP) in greater depth than at level 3.
