Hospitality and Catering Advanced Apprenticeship Level 3

This is a credit based qualification utilising observations and assessment delivered within the workplace. Suitable for restaurant, banqueting or fine dining environments. Targets set by the assessor will maintain progression and incorporate delivery of the certificate and ERR. A portfolio of evidence will be developed to prove competence. The qualification will cover purchasing, stock control, menu planning, customer service, teamwork, health and safety awareness at work, time management and presentation and the use of appropriate equipment. Portion control, fish, poultry, game, meat, pastry and desserts can also be covered but unit choice is flexible to suit the workplace. College attendance will be required for the Technical Certificate and Functional Skills elements - details of attendance will be confirmed by the assessor upon induction.
