Level 3 Professional Chef Diploma in Advanced Cookery Techniques (Larder or Patisserie)

This advanced course is designed to further your existing catering skills, developing your ability to work under pressure and as part of a team. You will gain customer care and craft skills, as well as valuable, hands-on experience. You will have a love of food, a creative instinct, and a desire to create new and exciting dishes. During the year you will build on your practical knowledge and skills, enabling you to work competently in a professional catering environment. Practical work covers all aspects of professional cookery and supervision, including menu design and planning, food costing, food hygiene, and knowledge of wines and spirits. You will take up a supervisory capacity in the kitchen and assessment will be conducted through various methods, including practical observation, oral questioning, written assignments, and the development of a portfolio. By completeting this course you will gain a Food Safety Certificate at Level 3, a WSET Certificate in Wines and Spirits, and the BII Personal Licence Holders Certificate. You will also have the opportunity to enter national and regional food preparation and food and drink competitions, as well as the opportunity to take part in a three-week European placement (subject to funding). A work placement in a commercial establishment is available to Level 3 students. This course may be eligible for the new 24 Plus Advanced Learning Loan.
