The same reasons as choosing mathematics apply. You should choose further mathematics if you have a real love of mathematics and want to get a deeper understanding of why and how mathematics works. You will be very good at it and enjoy the challenge of solving difficult problems that take you outside your comfort zone. Obviously further mathematics is somewhat specialist and it may narrow future options.
