Professional Cookery Diploma Level 3

This course is designed for individuals wishing to progress in the catering industry. The industry provides a large number of opportunities and jobs in which practical ability is needed i.e. fine dining restaurants, quality hotels, cruise ships, armed forces, music and sporting events. This course is specifically designed to accommodate part-time employment so that students can study to gain their qualification and gain experience in the hospitality industry. Course Content - The course aims to provide students with the skills and confidence to provide excellent standards of service in the hospitality industry, with emphasis on preparing and serving food for customers in 'The Restaurant- at North Star. The course includes: Supervisory skills, Practical Gastronomy, Advanced cooking techniques in Meat, Fish, Shellfish, Poultry, Game and vegetable dishes, Dough, Paste and Desserts, Biscuits, Cakes, and Sponges, Petit Fours, Health and Safety/Food Hygiene, Supervised experiences working in the college kitchens, Communication Skills, Tutorials, Supported Education. Each student will be allocated a personal tutor.
