Cookery: Cooking Around the World (NCFE Level 1)

You will be making different soups/sauces, prepare different meat, chicken and fish dishes, including rice and fresh pasta. Plus pastries savoury and sweet & baking breads. During the course these may include: Phat Tai from Thailand; Squash and Asparagus Risotto from Italy Fresh Papardella Pasta & Pesto from Italy; Cajun Fish Cakes - Louisiana; Dutch Chicken Curry; Salmon en Papilotte from France; Moroccan Lamb Tagine; Chocolate Flan etc. You will also design and create your own dish. Dishes can be adapted to Halal or any additional needs/requirements. Please advise regarding any allergies or additional requirements you may have.

You will receive both verbal and written feedback from your tutor about your progress on course. You will complete a folder of work, which will be continually assessed by your tutor.
