You will be learning about: Food Safety laws and how to comply with them Food Hazards, focussing on Bacteria and how they cause food poisoning How to prevent cross contamination and food poisoning with good practices Correct storage and temperature controls to prevent food contamination Control of food pests Personal hygiene. Design of premises, equipment and maintenance to prevent contamination. Cleaning and disinfection and the use of cleaning schedules How to minimise the risk of food poisoning in your workplace and an awareness of your responsibilities if you serve food to the general public. You will be listening, discussing, observing, note taking and reading in readiness for the assessment at the end of the session. You will be using a range of materials to enhance your learning such as hand-outs, internet and workbook/text book.

A short initial assessment and tracker sheet (ILP) will be completed. If there are Special needs or other learning difficulties you must state this at enrolment, so support or alternative materials can be discussed and arranged. Assessment At the end of the course you will complete the multiple choice exam set by the CIEH. This is externally marked. To succeed you must correctly answer 20 out of the 30 questions. You will need a notebook, pen, eraser and pencil (pencil needed for the Assessment) You will be provided with a course handbook � the cost is included in the fee you have paid. You must also bring photographic proof of identity � this is a requirement from the CIEH. A Driving License or Passport are ideal documents for this, something to show you are the person you say you are! Please bring refreshments as this is a day course. There are no additional costs. By enrolling on this course you will receive a course textbook, workbook and other resources and the fee includes all examination fees and administration. Will I need to do anything in my own time? You may like to look at the Food Standards Agency website before coming on the course or alternatively look at the specification as stated on the CIEH website.
