Catering and Hospitality Level 1 Diploma

This course will give you a basic introduction to the catering industry. You will learn the basic skills and processes required to prepare you for work in this industry at an operational level After successful completion of the level 1 diploma you will normally progress onto the level 2 diploma to develop your skills further. Students would normally start at level 1 to gain the necessary skills before progressing to level 2. The catering department has exceptional facilities with several very well equipped kitchens, a bakery and an 80 seat, licensed public restaurant. You will spend time doing practical activities in the kitchens to develop your basic kitchen skills. You will be preparing food for the restaurant and experience a realistic working environment working in the kitchen during the lunch time service. This will allow you to practice your cooking skills. You will also prepare the restaurant for service and practice your food service skills when serving customers in the restaurant. There is a classroom element of the course where you will look at the theory of cooking processes and food service to help you prepare for the assessments. You will cover topics such as food safety, cooking techniques, food and beverage service, menu planning and preparing healthier foods and food for special dietary requirements. There will also be opportunities for you to work on your assignments in a group or individually and research recipes and ingredients.
