Assessments will take place through practical assessments, portfolio work and written tests. You will also be expected to complete a minimum of 36 hours work placement experience throughout the year. Additional optional textbooks include: Advanced Practical Cookery by John Campbell Le Repertoire de la Cuisine by Louis Saulnier Patisserie by Leonard John Hannerman The Theory of Catering by Professor David Fosket.
