This programme is designed for anyone who manages or supervises work in a catering setting where food is prepared, cooked or handled. Safety training is a key ingredient in preparing and preserving essential skills in the workplace. Food safety competence is fundamental in enabling employees to deliver high quality food to customers safely. Training Methods The course is mainly classroom based, with external site visits, and is taught by a CIEH approved tutor. Candidates will be provided with a comprehensive course handbook, which covers all aspects of the syllabus.

Name: Level 4 Award in Managing Food Safety in Catering Qualification title: Award in Managing Food Safety in Catering (QCF) Qualification type: Assessment To achieve the award you must undertake a controlled assignment based on your chosen workplace and take a written examination. The controlled assignment is completed under examination conditions. The controlled assignment comprises two sections: The first is based on HACCP principles and the second on the application of food safety management. Both sections must be completed with reference to your chosen workplace. The controlled assignment is worth 100 marks. The pass mark for the controlled assignment is 60. Candidates have two hours to complete the controlled assignment. The examination paper consists of five structured questions each consisting of several parts requiring short answers in spaces provided on the examination paper itself. You are expected to answer all the questions. Each question is worth 20 marks. You will have 2½ hours to complete the examination. The pass mark for the exam is 60. The final mark you will be awarded is the average of the marks achieved in the controlled assignment and the examination.
