Festive Cake Decorating

This course looks at a range of ways to create an attractive royal iced cake, plus decorative biscuits and amazing mince pies, suitable for the festive period. Learners will prepare almond paste and royal icing, and will learn how to apply these successfully. Fondant festive models will be created to adorn the cake. Some bakery tasks will also be included within the sessions, including demonstration of a light fruit cake which can be baked at home and then decorated during the course. Learners will leave the course with a fully decorated cake to use at home during the festive period, plus decorated biscuits and Viennese mince pies created during the five weeks, which could be frozen if desired. By the end of the course you will have developed your knowledge and skills, and increased your confidence to reproduce the recipes at home, and to move on to a further decorating course. By the end of the course the learner will: Prepare a selection of decorated festive biscuits Prepare Viennese mince pies Prepare royal icing and use it successfully in a piping bag. Cover a cake correctly with almond paste and royal icing. Create fondant decorations using cutters and modelling techniques. Design and create a fully decorated Christmas cake.

Entry requirements

The tutor will bring all ingredients required each week, (apart from the fruit cake which learners will be guided on preparing at home). Learners will need to provide their own containers in which to take home their finished products each week, and an apron/ protective clothing.
